Delicious, creamy, and dreamy… these popsicles are a healthy new twist on some of our favorite sugar heavy treats. If you like matcha mochi, these may become a new fave. These are low glycemic and free of processed sugar. Yacon is a low calorie natural sugar substitute that is well known for it’s health benefits, including lots of antioxidants and digestion-boosting inulin. Great for grown-ups, but even the kids will love them.

Preparation Time: 5 minutes

Servings: Depends on size of popsicle molds

Ingredients:

Directions:

  1. Combine all ingredients in a blender and blend until well combined and smooth. 
  2. Pour into popsicle molds and freeze for at least 4 hours before enjoying.
